Orange Chocolate Chip Cupcakes Recipe

Orange Chocolate Chip Cupcakes Recipe

Makes 12.

  • 125g butter, softened, or 1/2 canola/vegetable/coconut oil (see note).
  • 3/4 cup of sugar.
  • juice and rind of 1 orange.
  • 2 eggs.
  • 2 cups sifted plain flour (all purpose).
  • 2 teaspoons baking powder.
  • 1/2 cup of milk.
  • 60g dark chocolate, diced into small squares or 1/2 cup chocolate chips.

  1. Beat sugar and butter together until light and creamy (about 5 minutes)
  2. Add in the juice and rind of the orange, and then mix in egg one at a time until combined.
  3. Add the sifted flour and baking powder in quarters, ensuring there are no lumps in the mixture.
  4. Mix in the milk into combined.
  5. Add in the chocolate chips gently so not to break them.
  6. Divide evenly into 12 cupcakes using a cupcake tin, and bake at 160C for 25 minutes or until mixed through.
  7. Ice with any frosting of your choice. I used chocolate buttercream, but almond, orange or vanilla frosting would be a nice choice also.

  • Don’t use olive oil. It has a noticeable savoury flavour that will give your cupcakes an odd taste. If you are to use oil, use one with a neutral taste such as canola or vegetable.
  • Don’t over-mix your batter, the cupcakes won’t rise as well.
